Still the best 40 years and counting
This is the best baby Swiss anywhere, which seems appropriate since Guggisberg invented it. I received a wheel for Christmas and it is still fantastic! (I have not eaten this cheese for at least 35 years.) Great balanced taste, milder than regular emmental (Swiss) cheese. Mouthwatering, not too salty, perfect balance of taste.
I would visit Guggisberg occasionally in the 1980's, and they still have outstanding cheeses after 40+ years. I plan to try this in a fondue, if the wheel lasts that long. I will order this cheese regularly now. I remember that it freezes well, so I may do that if necessary.
